Kitchen Manager

Duties:

The Kitchen Manager will be the primary person in charge and is responsible for the overall operations of the Somerville Arts Council Nibble Kitchen.

Essential Functions

Oversee Nibble Kitchen

  • Ensure that Kitchen Standard Operating Procedures are rigorously followed and enforced
  • Manage entrepreneur and kitchen schedule: coordinate kitchen time with Nibble entrepreneurs and vendor deliveries
  • Work with entrepreneurs to develop teams for front and back of house
  • Work with entrepreneurs to develop cost effective and marketable food
  • Ensure Nibble entrepreneurs create food that is cooked and served correctly in a timely manner, portioned correctly and attractive
  • Be point person between Nibble Kitchen, Arts Council, Bow Market, Inspectional Services Department (ISD), and entrepreneurs
  • Ensure Nibble Kitchen meets all sanitary standards, including all applicable local Board of Health regulations and State Sanitary Code related to food establishments
  • Ensure customers have a pleasant dining experience and address any customer concerns or complaints
  • Ensure entrepreneurs cultural heritage is respected and reflected via food and kitchen

General kitchen administration work and kitchen maintenance

  • Track time/hours of entrepreneurs
  • Manage bookkeeping
  • Manage/order food
  • Order supplies and equipment as needed
  • Oversee inventory, ensure kitchen cleanliness, maintain equipment maintenance
  • Manage deep cleaning schedule and periodic grease trap cleaning according to standard operating procedures
  • Oversee and assist with trash removal

Collaborate on Nibble kitchen mission and marketing efforts

  • Report to Cultural Director to ensure kitchen aligns with overall mission of Nibble
  • Assist Cultural Director, Culinary Coordinator and Nibble entrepreneurs to promote Nibble Kitchen and overall program via social media
  • Coordinate with other City Departments and outside networks to help propel Nibble entrepreneurs to creating their own businesses

Manage projects and help with entrepreneurship goals once entrepreneurs are working more independently:

  • Develop and run special projects like pre-paid weekly dinner supper clubs
  • Network with local chefs to create internship opportunities for Nibble entrepreneurs
  • Work with team to find opportunities for entrepreneurs upon Nibble Kitchen graduation
  • Create and manage documents related to Nibble Kitchen to create structure and systems
Requirements:

Education and Experience

High School diploma and three (3) years related experience as a chef or kitchen manager, or any equivalent combination of education, training and experience which provides the required knowledge, skills and abilities to perform the essential functions of the job. Experience working with immigrant communities preferred. Knowledge of an applicable foreign language preferred.

Special Requirements

  • CPR and First Aid certification

Must hold the following current Massachusetts certifications per 105 CMR 590 at or within one month of hire:

  • Food Protection Manager
  • Allergen Awareness Training

Failure to keep all certifications current may result in separation of employment. Choke save certification preferred.  Employee standard schedule includes evenings and weekends, and may require flexibility.

Knowledge, Abilities and Skill

Knowledge: Knowledge of food industry and commercial kitchen management and kitchen Standard Operating Procedures; knowledge of health code requirements; knowledge of Point of Sale platforms.

Abilities: Ability to meet and deal with the public effectively and appropriately; ability to handle problems effectively; ability to communicate clearly, both orally and in writing; ability to operate a computer; ability to maintain, manage, and organize records; ability to deal appropriately with employees, officials, other elected officials and members of the general public; ability to plan, manage and execute restaurant concepts and cooking classes.

Skill: Excellent organizational skills; excellent data processing skill in the use of personal computers and office software, including word processing, database, and spreadsheet applications; excellent communication and customer service skills; excellent attention to detail and problem-solving skills. Bi-lingual or multilingual language skills preferred.

Work Environment

Work requires some agility and physical strength, such as standing or walking most of the work period. Occasionally, work may require lifting heavy objects and carrying them. There may be need to stretch and reach to retrieve materials. Usually, the work will require extended physical effort over a significant portion of the work day. Duties generally do not present occupational risk. Injury could occur, however, through employee failure to properly follow safety precautions or procedures. Examples of injury include bruises from falls, cuts or burns, or muscular strains from lifting, pushing or carrying heavy equipment or work materials. May be exposed to wet/humid conditions, extreme temperatures, oils, moving mechanical parts, and/or potentially hazardous agents/chemicals. May be exposed to elevated noise levels.

Physical and Mental Requirements

The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. Reasonable accommodations may be made to enable individuals with disabilities to perform the position’s essential functions.

Physical Skills: Work effort principally involves standing and walking to perform work tasks, with intermittent periods of sitting. May be required to lift up to 50 pounds, and reach, carry, bend, and push/pull up to 95 pounds.

Motor Skills: Must be able to frequently talk/listen, grasp, push, reach, stoop/kneel/crouch, and use repetitive wrist/hand/finger movement. Must be able to regularly move and operate mechanical equipment. Minimal motor skills are also required for activities such as operating a telephone, personal computer and/or office equipment.

Visual Skills: Visual demands include clarity of vision, three-dimensional vision, precise hand-eye coordination, and ability to identify and distinguish colors. Employee will also require visual skills to constantly read documents for general understanding and analytical purposes.
